Simon and Laura's

• 30 ml Gin
• 15 ml Fresh Lemon Juice
• 15 ml Honey Syrup
• Champagne or Prosecco to top (about 60 ml)

1. Shake gin, lemon and honey syrup with ice
2. Strain into a chilled flute
3. Top with champagne and give it one gentle stir

Garnish: A lemon twist

• 30 ml Elderflower Liqueur
• 30 ml Lillet Blanc
• 90 ml Prosecco
• 30 ml Soda Water

1. Fill a wine glass with ice
2. Add Elderflower Liqueur and Lillet, then prosecco and soda
3. Stir gently once

Garnish: A lemon wheel

• 60 ml White Rum
• 25 ml Fresh Lime Juice
• 20 ml Strawberry Syrup
• 5 ml Cane Sugar Syrup

1. Shake all ingredients hard with ice
2. Double strain into a chilled coupe

Garnish: A halved strawberry on the rim

• 60 ml Bourbon
• 30 ml Fresh Lemon Juice
• 20 ml Cane Sugar Syrup
• 20 ml Egg White (optional)
• 15 ml Dry Red Wine

1. Dry shake bourbon, lemon, syrup and egg white without ice
2. Add ice, shake hard, strain over fresh ice into a rocks glass
3. Slowly pour the red wine over the back of a spoon so it floats on top

Garnish: Nothing else, the wine layer is the garnish

• 60 ml Blanco Tequila
• 30 ml Fresh Lime Juice
• 15 ml Agave Syrup

1. Shake all ingredients with ice
2. Strain over fresh ice into a rocks glass, half salt rim if you like

Garnish: A lime wedge

• 40 ml Vodka
• 15 ml Coffee Liqueur
• 15 ml Hazelnut Liqueur
• 30 ml Fresh Espresso
• 5 ml Cane Sugar Syrup

1. Shake everything very hard with plenty of ice
2. Double strain into a chilled coupe

Garnish: Three coffee beans

• 50 ml Rye Whiskey
• 20 ml Fresh Lime Juice
• 2 dashes Aromatic Bitters
• Ginger Beer to top (about 100 ml)

1. Build in a copper mug or highball filled with ice
2. Top with ginger beer and stir once

Garnish: A lime wedge and a piece of candied ginger

• 45 ml Aged Rum
• 15 ml Campari
• 45 ml Pineapple Juice
• 15 ml Fresh Lime Juice
• 15 ml Cane Sugar Syrup

1. Shake all ingredients hard with ice
2. Strain over fresh ice into a rocks glass

Garnish: A pineapple wedge and a pineapple leaf

• 25 ml Ginger Syrup
• 25 ml Fresh Lime Juice
• Soda Water to top

1. Build in a highball filled with ice
2. Top with soda and stir gently

Garnish: A lime wheel

• 25 ml Strawberry Syrup
• 10 ml Ginger Syrup
• 25 ml Fresh Lemon Juice
• Soda Water to top
